But there’s another side to this grape entirely, one that only reveals itself in places where the growing season is long; the temperatures are cool, and the vines must work for every bit of ripeness they can earn.

What Does “Cool Climate” Actually Mean?
Cool climate winemaking isn’t just a buzzword; it’s a fundamental shift in how a grape expresses itself.
In warmer growing regions, Chardonnay ripens quickly. Sugars climb fast, acidity drops off, and the wine often leans on winemaking techniques, including oak, malolactic fermentation, and lees stirring, to build complexity that the grape didn’t have time to develop on its own.
In cool climates like the Finger Lakes, the opposite happens. The growing season stretches out. Grapes ripen slowly and evenly, building layered flavors while holding onto their all-important natural acidity. The result is Chardonnay with precision and energy: wines that feel alive in the glass, with a clarity of fruit and mineral backbone that warmer-climate wines simply cannot replicate.
Think crisp apple and citrus over tropical fruit. Fresh cream and wet stone over vanilla and oak. These are wines with energy, defined by the kind of natural acidity that makes them endlessly versatile at the table, as at home alongside roasted chicken or a buttery risotto as they are with fresh oysters or a well-stocked cheese board.

Keuka Lake sits at roughly 800 feet above sea level, cradled by hillside slopes that drain cold air away from the vines and reflect warmth back during the day. The lake itself acts as a thermal regulator, moderating spring frosts and extending the growing season into autumn, giving our fruit the time it needs to develop real complexity.
